You cant find better taco shop food than the Jilbertos that is at Town Center Market in VC. So good and great, friendly faces. Always fresh. Try the Conga Burrito

Win or lose a burrito makes you feel like a champ.
Jilberto's used to be located in the middle of Valley Center and Pala. Literally down the street from Pauma.
Service was good and so was the food but the people that hung around looked sketchy to me... I always felt like I was on an episode of 60 Days in or Sons of Anarchy lol.
My and my friends would order and eat quickly to get back home.
Safely and in one piece.
Sometimes you feel like you need to eat something that isn't comped.
When you don't want crab legs and prime rib, a burrrito always did the job.
This location is closed now and has moved up to the round about.

Best Mexican fast food in north county. The food is always great, and the hot sauces delicious. I think the cheese they use is one of the things that makes them stand out too. So good! Definitely reccomend!

This place has great potential. And people who work here are very nice.
The salsa are, in general, are also very good.
Why only two stars? Here is why:
-- The green salsa was a little spoiled. See the picture, you can see bubbles coming up...
-- The red salsa was also past its prime.
-- The burrito lacked any cheese, or other toppings. It was 100% meat and bell peppers/onions. (See the picture of the burrito opened up on my plate).
-- The meat inside the burrito was very tasteless. It needs seasoning!
-- Decor/ambiance: I know it's a no-frills place, but I did not see any signs of love... c'mon! -- ANY sort of decor would be nice.... maybe a plant at least! Due to it being pretty much a bare-bones empty rectangular room, the acoustics are very live: with only a few people inside it's very loud.
NOTE: I went out to the patio to escape the noise inside, and was attacked by hordes of black flies. So sitting outside is not really an option.
Overall, if you want somewhat decent Tex-Mex then this is the place to come, but don't expect too much either. I might recommend one enchilada for a hangover.
